Last night, after I got home from work, I walked into my kitchen and realized that I forgot to stop by the grocery store on my way home. Thank God for my creative thinking. I opened the fridge to find out I had enough to make something special for my family. In the freezer I pulled out frozen boneless chicken cutlets and thawed that out while I searched the fridge some more. We had a package of flour tortillas, sour cream from last week’s tacos, lettuce, tomato, and a jar of salsa. Since I come from a Spanish background, I used some of my best spices to season the chicken. I used a starting base to season the chicken. It consists of chopped green and red peppers, onions, celery, garlic, a little bit of water and oil. I sautéed in a large frying pan and voila; Delicious! My family couldn’t stop phrasing me for a meal well done!
