There are very few dinners that I enjoy more than a good pot roast dinner. It was cooked just right where the meat was very tender and the potatoes and carrots had great flavor. There was also corn, but that was of no real importance compared to the delicious beef pot roast. I had wished that regular carrots were used instead of baby carrots because regular carrots have the skin that absorbs the beef flavor and seasoning and is very delicious. The baby carrots absorbed some flavor, but not near as much as regular carrots would have. I really wish I was having this for dinner again tonight, but it is limited to peanut butter and crackers tonight. What a big difference. Despite this, I am looking forward to the next time I get to enjoy more pot roast. Hopefully I will have purchased some real carrots to make the meal better, as well as some gravy.
