I have a huge garden that’s been producing far too much food. My few grocery trips in the last month or so have consisted of buying dairy and fish. So, last night’s dinner was made almost entirely from garden produce – consisting of lemon roasted salmon, with carrots, potatoes, onions, tomatoes, summer squash and kohlrabi – all fresh picked that afternoon for a warm and delicious meal! On the side, we had mashed potatoes and a tomato salad, again primarily made from garden produce – with the exception of the vinegar and oil that went on the tomato salad for dressing. It was a quick and delicious meal that everyone enjoyed!
